Use your favorite chicken spices or leave them alone, the chicken will be flavorful and delicious thanks to the garlic, soy sauce and lemon. I put in a pinch of spices, the composition is as follows: ground chili, paprika, basil, coriander, nutmeg.
Wash the chicken thoroughly, remove feathers and the coccygeal gland located under the tail, peel off the yellow rough skin on the legs with a knife.
Mix honey, soy sauce, vegetable oil, chicken spices, salt, and ground pepper to taste to make the marinade.
Coat the chicken inside and out with the marinade, wrap with plastic wrap, and refrigerate for 2 hours.
Cut the chicken in half lengthwise and flatten it, or leave it whole. Optionally place potato wedges in the baking pan with the chicken on top.
Bake in a preheated oven at 240°C (464°F) for 45–50 minutes, adjusting time and temperature as needed for your oven. The chicken is done when the thickest part reaches 74°C (165°F) internal temperature.
