Instructions

  1. Fry the diced onion and garlic with the mince in hot oil until crumbly. Stir in tomato paste. Mix in the carrots. Add tomatoes and stock, season and simmer for about 15 minutes. Possibly add a little more stock.
  2. Rinse and drain the chickpeas in a sieve. Add to the mince and simmer for about 5-10 minutes until they are hot.
  3. Serve sprinkled with parmesan.
