Cook bacon in a pan over medium heat for about 5 minutes until browned. Chop the pear and add to the pan, cooking for 2-3 minutes until tender. Remove from heat and let cool.
Preheat the oven to 220°C (428°F).
Brush the pizza dough with sour cream or creme fraîche. Top with finely chopped chicory, the cooled bacon and pear, and crumbled Gorgonzola or Roquefort. If desired, sprinkle additional grated cheese on top.
Bake for 15-20 minutes until the crust is golden and the cheese is melted. Remove from oven, sprinkle with crushed black pepper, and serve immediately. If desired, garnish with grated lemon peel.
