Heat a saucepan over medium-high heat. Add the minced meat and cook for 5-7 minutes, stirring and breaking it apart, until no longer pink. Stir in onion powder and/or garlic powder to taste if desired.
While the meat cooks, clean and dice the 2 red bell peppers and the orange or yellow bell pepper.
Add the diced peppers to the saucepan along with the corn and kidney beans. Stir and cook for 2 minutes. Pour in the tomatoes, season with salt and pepper to taste, reduce heat to medium-low, and simmer for 20-30 minutes, stirring occasionally. Add broth if needed.
Ladle into bowls, top each serving with a dollop of sour cream, and serve with flatbread or rice.
