Mix all dry ingredients in a large bowl. Add the butter and work it into a crumbly mass.
Grate the cheese, add it with the beaten egg and knead the mixture into a dough. Shape a ball and wrap it in a piece of cling film and place in the refrigerator for 30 minutes.
Preheat the oven to 210 ° C and line or grease baking sheets with baking paper.
Roll out the dough on a lightly floured surface 3 mm thick and cut out shapes with a cookie cutter (approx. 6 cm). Place on the baking sheet with sufficient space and bake for approx. 10-15 minutes until golden brown.
