Instructions

  1. Core the pumpkin and cut into cubes including the skin.
  2. Sweat the chopped onion in a little oil, add the garlic and roast with the pumpkin pieces. Add the spices, squeeze in a few centimeters of tomato paste, and roast a little more.
  3. Then add the tomato pieces (if you prefer the tomato strain, you can do that too). Let everything simmer until the pumpkin pieces are relatively soft. Depending on the size of the cubes, this takes about 20-25 minutes. Then add the corn and red beans. Let simmer again for about 10 minutes, until everything is soft and creamy. Season again if necessary.
  4. Served with bread or rice, it`s a whole meal.
  5. A wonderful autumn recipe for 2 - 3 people, depending on the size of the pumpkin.
  6. Tips: The recipe can be adapted wonderfully, depending on your taste, other legumes can also be used, e.g., white beans or beetle beans, fresh tomatoes, pieces of paprika etc. I always use herbal salt, freshly ground pepper and ready-made chilli spices, you can of course also use your own spices (cumin, oregano, chilli powder etc.).
