Cut 750 grams of beef into small strips. Chop 3 garlic cloves, 1 Tbsp of ginger, 2-3 birdseye chilies, 1 green bell pepper, and 1 red bell pepper.
In a bowl, mix the beef, garlic, ginger, chilies, peppers, and 2 Tbsp of Thai curry paste. Cover and refrigerate.
Add the canned corn to the beef mixture, pour in 2 tablespoons of water, and stir to combine. Microwave on high for 3 minutes.
Heat oil in a large frying pan over medium-high heat. Pour the beef mixture into the pan and fry for 5-7 minutes, stirring frequently, until the beef reaches an internal temperature of 63°C / 145°F or is no longer pink in the center.
Remove the beef from the pan and set aside. Add the chopped onion to the pan and fry over medium heat for 3 minutes, adding more oil if needed.
When the onion turns golden, stir in the bell peppers, corn, and 220 grams of bamboo shoots. Fry over medium-high heat for 5 minutes, stirring occasionally.
Return the beef to the pan. Stir in the fish sauce, 125 milliliters of beef broth, and 1 Tbsp of brown sugar. Simmer over medium heat for 10-15 minutes, stirring occasionally.
