Instructions

  1. Rub the quinces with a dry kitchen towel and wash. Peel, quarter and core the fruit. Dice the fruit quarters.
  2. (A liqueur can be made from the pods and seeds.)
  3. Bring the quince and the rest of the ingredients to the boil, cook over low heat until the quinces are soft.
  4. Pour the chilli quinces into preheated jars, close immediately.
