- Rub the quinces with a dry kitchen towel and wash. Peel, quarter and core the fruit. Dice the fruit quarters.
- (A liqueur can be made from the pods and seeds.)
- Bring the quince and the rest of the ingredients to the boil, cook over low heat until the quinces are soft.
- Pour the chilli quinces into preheated jars, close immediately.
