Heat the oil and add the chilli pepper, let sizzle for about 3 - 4 minutes. Remove the chilli pepper again. First sweat the carrots in the flavored oil. Then add the onions and garlic and let them turn to glass.
Season everything with a little salt, pepper and Chinese spices. Add the pepper cubes and fry for another 2 - 3 minutes. Finally add the zucchini and deglaze with soy sauce and vegetable stock and let it simmer a little.
In the meantime, do not cook the pasta completely in the salted water, sieve it, mix it with the vegetables and let it steep for a few more minutes. Stir every now and then so that the noodles soak up the mixture! Finally season again with salt, pepper or soy sauce!
Tip: A sweet chili sauce tastes good with it, but sour cream is also always very popular with my guests, as it softens the spiciness a little.
