Knead the sugar, vanilla sugar, flour, baking powder, cocoa, butter cut into pieces and eggs quickly to form a smooth dough.
Roll out 3-5 mm thick on a little flour.
Cut out shapes as desired and place on baking sheets lined with baking paper. Bake in a hot oven at 175 degrees for about 12 minutes. Allow to cool on a grill.
Chop the couverture, melt over the water bath and brush or sprinkle the cookies with it. If desired, decorate with chocolate shavings.
