I never make a pre-dough because I can do it wonderfully without it. But if you want to do one, you are welcome to do so.
Dissolve the yeast in lukewarm milk and add sugar. Set aside for a moment.
Mix flour with salt and briefly knead in soft, but not too runny butter. Add quark and yeast milk and knead for at least 10 minutes. Let rest for 1 hour. (I let my BBA do it all)
After resting, whip the yeast dough vigorously again and knead.
Chop the chocolate and knead briefly. (Doesn`t matter if it runs a little, it doesn`t affect the taste)
Roll out into a square on a floured surface, but not too thin. Now brush with plum jam. Roll up the dough and cut it lengthways to make 2 pieces.
Twist both strands together, bend them in the middle and twist them together again. (How should you describe it differently now?)
Place on a greased baking sheet and let rise for another 30 minutes.
Brush with sweetened milk and bake at 165 ° C (180 ° C top / bottom heat) for about 45 minutes. (My oven is very hot and needs less)
