Put the cream and 500 ml of the milk in a saucepan, add the chopped chocolate and slowly bring to the boil. Separate the eggs and place the yolks in a tall container with all the other ingredients. Beat thoroughly with the blender.
Pour into the boiling chocolate milk while stirring, simmer for 2 minutes while stirring constantly.
Beat the egg whites until stiff and fold into the cooled pudding.
