- Halve the peppers and clean. Cook in a saucepan with water and salt for about 20-25 minutes. Then drain and let cool down a bit.
- Then puree the pepper halves together with the garlic, almonds, olive oil, vinegar and the cumin. Season to taste with salt and freshly ground pepper.
- If you take red peppers you get red mojo, if you take green, correspondingly green mojo.
- For the eye, you can garnish the mojo with finely chopped paprika strips.
- It tastes great with Canarian potatoes. These are potatoes that are cooked in water with their skin on together with lemon wedges and coarse sea salt.
