Peel, core and chop the apples. Cut the dried fruit and apple into pieces and place in a saucepan with the orange peel and juice, gingerbread spices, vinegar and sugar and heat slowly.
When the sugar has dissolved, bring to the boil and let the mixture boil down for about 45 minutes, stirring constantly.
Pour hot into clean jars, close and let steep for about 1 month.
