- Put the eggs and egg yolks in a bowl with the sugar, whip in a hot water bath until creamy and peel until the rose. Let cool down.
- Fold in 250 ml of whipped cream, cinnamon and the peaches cut into small cubes. Then fold in the remaining 250 ml of whipped cream.
- Put everything in a tin lined with cling film and place in the freezer for at least 5 hours.
