Instructions

  1. This sweet bread, reminiscent of cinnamon rolls, based on a recipe by the New York food stylist Sweet Paul, tastes slightly warm and is particularly tasty with a little butter or jam or chocolate spread. The note of cinnamon and its special shape make this bread something special.
  2. 1. Stir the yeast into 60 ml of lukewarm water and set aside.
  3. 2. Mix the flour with 55 g sugar in a bowl.
  4. 3. Add the milk, the prepared yeast mixture and 45 g liquid butter to the flour mixture and stir everything with the whisk of the mixer.
  5. 4. Add the two eggs one after the other and stir with a dough hook until you get a smooth dough.
  6. 5. Cover the dough and let rise in a warm place for about an hour.
  7. Then roll out the dough on a floured work surface into an approx. 25 x 30 cm sheet of dough.
  8. 6. Mix cinnamon and sugar according to taste and sprinkle generously over the dough. Then roll it up, either from the longer or shorter side, and place on a baking sheet lined with baking paper.
  9. 7. Make V-shaped incisions on the bread with scissors from above over the entire length and at a distance of approx. 2 - 3 cm. Then pull the incisions apart a little. Cover again and let rise again for about 30 minutes.
  10. 8. Bake the bread at 175 degrees, convection 160 degrees, for about 20 minutes.
  11. 9. Take out of the oven, spread the remaining liquid butter while it is still hot and allow to cool
  12. 10. Mix powdered sugar with water to form a thick glaze and decorate the bread with it.
