Instructions

  1. Season the chicken breasts with salt and pepper.
  2. In a bowl, beat the eggs together with cinnamon powder and turmeric.
  3. Set up three shallow bowls with flour in the first, the egg mixture in the second, and breadcrumbs in the third. Coat each chicken breast first in flour, shaking off excess, then dip in the egg mixture, and finally coat in breadcrumbs, pressing gently to adhere.
  4. Preheat the oven to 170°C (338°F).
  5. Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 2 minutes on the first side.
  6. Flip the chicken and place in the preheated oven. Bake for 20 minutes until cooked through (internal temperature 74°C / 165°F).
  7. For extra crispiness, increase the oven temperature to 230°C (446°F) and bake for an additional 2-3 minutes until the coating is golden brown.
