Instructions
- Combine the flour, cinnamon, and salt in a bowl and mix.
- In another bowl, mix the melted butter with the powdered sugar using a wooden spoon.
- Add the flour mixture to the butter mixture and work by hand into a shortcrust pastry.
- Shape the dough into a round, flat disk, wrap in cling film, and refrigerate for 30 minutes.
- Preheat the oven to 200°C (392°F) and line a baking sheet with parchment paper.
- On a lightly floured work surface, roll out the dough to 5 mm thickness.
- Using an 8 cm round cookie cutter, cut circles from the dough.
- Place the circles on the baking sheet using a spatula, continuing until all dough is used.
- Bake for 10 minutes until the cookies turn golden but not dark.
- Remove from the oven and let cool on the baking sheet for 2 minutes.
- Transfer to a wire rack using a spatula and let cool completely.
