Instructions
- Thaw the frozen currants or wild berries at room temperature for 30 minutes.
- Preheat the oven to 220°C (428°F).
- Grease a flat baking dish with fat and place the thawed berries in it.
- In a bowl, whisk the eggs with 2 tablespoons of powdered sugar for 2–3 minutes until frothy.
- Stir in the vanilla sugar, flour, and milk until the batter is smooth.
- Pour the batter over the berries.
- Bake at 220°C (428°F) for 15 minutes until the top is golden brown.
- Remove from the oven and dust with 2 tablespoons of powdered sugar while still warm.
