- For the tiramisu , the yolk and egg white are separated and placed in different bowls.
- The egg whites are beaten with a hand mixer or food processor until stiff.
- Then mix the yolks in the other bowl with the icing sugar to a frothy mass.
- Next stir the mascarpone into the yolk mixture and then fold in the snow.
- Mix the coffee and rum in a shallow bowl or plate and soak the ladyfingers in it one after the other.
- Then alternately layer the ladyfingers and mascarpone mixture in a mold - finish with the mascarpone cream.
- Now put the tiramisu in the refrigerator for at least 2.5 - 3 hours.
- Sprinkle with cocoa before serving and garnish with fresh berries if desired.
