Put 1.5 tablespoon chia seeds in each of 4 dessert glasses or bowls. Sweeten the coconut milk to taste with sweetener, stevia, sugar or similar and add 100 ml each to the chia seeds.
Stir well and let soak in the refrigerator for at least an hour. Stir in between so that the chia seeds are evenly distributed.
In the meantime, peel, stone and puree a ripe mango. If the mango is not sweet enough, sweeten it as well.
Finally, distribute the mango puree evenly on the finished coconut pudding.
