Mix the pudding powder with sugar (amount according to package instructions) and a little coconut milk, bring the remaining coconut milk to the boil and stir in the mixed powder. Bring to the boil while stirring.
Let cool and avoid skin formation on the pudding.
Beat the cream with 1 tablespoon of sugar until stiff.
Clean fresh pineapple and cut into small pieces or drain canned pineapple. Pineapple (as much as you want) and the cream fold into the cooled pudding.
