Instructions

  1. Cut the honeydew melon into pieces and drizzle with lime juice. Halve the vanilla pod lengthways and scrape out the pulp.
  2. Heat coconut milk with sugar and vanilla pulp while stirring until the sugar has dissolved. Allow to cool slightly. Stir in yogurt and add sweetener to taste.
  3. Mix honeydew melon with coconut sauce and sprinkle with desiccated coconut.
