Bring the coconut flakes to the boil with the water and allow to cool.
Line a colander with a clean kitchen towel and hang it over a bowl. Pour the coconut mixture into the sieve and squeeze out the cloth well. This is how all the liquid comes out of the desiccated coconut.
Empty the liquid into a saucepan, add the pulp of the vanilla pod and the sugar. Now bring to the boil and simmer for 5 - 8 minutes. Fill the syrup into clean bottles and close them tightly.
The next day a plug formed on the syrup, which you can remove with a knife.
Tastes great in coffee or tea.
Do not throw away the coconut flakes, they can still be used for baking.
