- Wash the mushrooms briefly and quarter them. Fry them in the butter in portions and take them out of the pan.
- Finely dice the onions, chop the garlic and fry both lightly, also remove from the pot.
- Possibly add a little butter to the pan, stir in the flour, deglaze with water and stir vigorously with a whisk.
- Add the wine, coffee and spices and stir until the sauce is slightly thick.
- Put the mushrooms, onions and garlic back into the pot and simmer gently for 1 hour with the lid closed.
- It goes well with ribbon noodles or baguettes.
