Ingredients

  • 1 kg mushrooms
  • 100 g butter, possibly a little more
  • 1 clove garlic
  • 3 onion (s)
  • 40 grams flour
  • 2 cup red wine, bitter
  • 1 cup water
  • 0.5 ½ cup coffee, stronger
  • 2 teaspoons salt
  • 0.5 teaspoon ½ pepper
  • 0.25 teaspoon ¼ marjoram

Instructions

  1. Wash the mushrooms briefly and quarter them. Fry them in the butter in portions and take them out of the pan.
  2. Finely dice the onions, chop the garlic and fry both lightly, also remove from the pot.
  3. Possibly add a little butter to the pan, stir in the flour, deglaze with water and stir vigorously with a whisk.
  4. Add the wine, coffee and spices and stir until the sauce is slightly thick.
  5. Put the mushrooms, onions and garlic back into the pot and simmer gently for 1 hour with the lid closed.
  6. It goes well with ribbon noodles or baguettes.
