Ingredients

  • 400 g potato (s), cut into cubes
  • 500 g bell pepper (s), cut into pieces
  • 1 medium onion (s)
  • 1 can mushrooms
  • 1 can tomato (s), (pizza tomatoes, 400 g)
  • 50 g cream cheese with herbs
  • 50 g cheese, rated
  • 200 ml vegetable stock
  • salt and pepper
  • Paprika powder

Instructions

  1. Fry the onion in a little oil, add the potato cubes and fry briefly. Pour in the vegetable stock and simmer everything on a low level. After ten minutes add the pepper pieces and mushrooms (if you add the juice of the mushrooms, the whole thing will be soupy). After another five minutes add the pizza tomatoes and cook with them. After a total of 20 minutes, the potatoes should be done. Then stir in the cream cheese and season to taste with salt, pepper and paprika. Finally stir in the grated cheese until it has melted.
  2. With reduced-calorie cream cheese and grated cheese, the whole thing is also low in fat.
