Peel the potatoes and cut into approx. 2 cm cubes. Cut the spring onion into slices. Roughly dice the peppers. Cut the carrot into thin slices. Cut the zucchini into half slices.
Heat the oil and fry each ingredient individually. Then put everything together in the pan and pour soy cuisine on top. Bring the liquid to the boil. Cover the vegetables and cook on a low heat for about 25 - 30 minutes, stirring occasionally. Finally, season the colorful potato pan with salt, pepper, soy sauce and the parsley.
