Sort out the rocket, wash and spin dry. Clean, wash and slice the radishes. Clean the mushrooms and cut into thin slices. Peel and dice the shallots and place in a salad bowl.
With a whisk, stir in vinegar, a little salt and pepper and mustard. Then gradually hide the oil. Mix the rocket, radish and mushroom slices with the sauce. Cut the sheep`s cheese into cubes and fold in. Spread the capers over the salad and serve with Tuscan white bread or olive bread.
