Clean, wash and roughly chop the vegetables. Remove the inside of the tomatoes.
Put about 5 tablespoons of olive oil in a large bowl and add the finely chopped garlic cloves. Add the vegetables, herbs, salt and pepper. Cover everything and let it stand for about 2 hours.
Prepare the rice according to the instructions on the packet.
Fry the prawns in a little olive oil over medium heat. After approx. 2 minutes the contents of the bowl are added. Fry everything quickly. Just before serving, season with salt and pepper to taste.
