Put the couscous in a bowl with a lid, pour the boiling water over it, season with salt and leave to stand for 5 minutes, covered.
Now cut the spring onions into rings. Peel and chop the garlic. Clean the zucchini, bell pepper, mushrooms and tomatoes and cut into pieces. Put everything in a pan with 2 tablespoons of melted margarine and steam in it for 5 - 8 minutes. Season with pepper.
Finally, mix the couscous with the rest of the margarine, fold in the vegetable mix, season again with salt and serve.
