Peel and dice the onion and garlic and sauté in heated oil. Clean, wash, quarter, stem and core the peppers. Remove the white partitions, cut the pod into cubes and steam it too.
Add the stock and cook for about 8 minutes.
Drain the corn, peel the tomatoes (if you like), remove the stems and remove the seeds. Cut into cubes and add with the corn. Let cook for about 3 minutes.
Season with salt, pepper and chilli. Finally stir in the parmesan and parsley.
