Mix the green spelled with the hot vegetable stock and let it soak for about 2 hours.
Roughly grate the zucchini, season with salt and let the water steep for a moment. Then squeeze out well through a cloth. Finely chop the onion and herbs.
Loosen the green spelled with a fork. Then mix with the zucchini, onion and herbs. Add the egg, flour and enough breadcrumbs to make a malleable mass (approx. 1 handful of breadcrumbs - depending on the size of the egg). Season to taste with salt, pepper and cayenne pepper.
Shape the mixture into about 9 patties and fry them until golden brown in olive oil that is not too hot.
