Instructions

  1. Peel the avocados and cut into small cubes.
  2. Bring the vegetable stock to the boil with a splash of olive oil and remove from the hotplate. Add the couscous, stir well and let it soak for about 3 minutes.
  3. Stir in the avocado pieces and season with lemon juice, salt and pepper. Arrange on plates and sprinkle generously with cress.
