First cut the spring onions into small pieces (I always tend to be very fine) and wash the crayfish and let them drain well. Put on pasta water.
Now fry the crayfish and spring onions briefly in a pan, then I add the cream and tomato paste (stir well). When everything is simmering on a low flame, season, add Metaxa and let simmer a little. The consistency can now be optimized according to taste by adding milk and / or sauce thickener. For me, the whole thing simmers for about 15-20 minutes, so plenty of time to cook the pasta. Drain the pasta and serve with the sauce.
It goes well with baguette and / or a fresh salad.
