Ingredients
- 600 g crab meat, (crayfish meat)
- 1 bunch spring onion (s)
- 400 ml cream
- 50 ml Metaxa
- 100 ml milk, possibly
- 0.5 tube ½ tomato paste
- salt and pepper
- Paprika powder, hot pink
- possibly sauce thickener
- 500 g ribbon noodles

- First cut the spring onions into small pieces (I always tend to be very fine) and wash the crayfish and let them drain well. Put on pasta water.
- Now fry the crayfish and spring onions briefly in a pan, then I add the cream and tomato paste (stir well). When everything is simmering on a low flame, season, add Metaxa and let simmer a little. The consistency can now be optimized according to taste by adding milk and / or sauce thickener. For me, the whole thing simmers for about 15-20 minutes, so plenty of time to cook the pasta. Drain the pasta and serve with the sauce.
- It goes well with baguette and / or a fresh salad.
