In the meantime, peel and dice the onion. Heat some oil in a saucepan, add half of the onions and sauté. Now add the spinach and season with freshly grated nutmeg, salt and pepper.
Mix the eggs in a bowl with the milk and the remaining onions and season with a little freshly ground pepper and salt. Heat some oil in a non-stick pan and add the mixture. Now let the mass build up and turn every now and then.
