The nuts are chopped very finely or, even better, rotated through an almond mill. Then mix with the coffee or cocoa and mix very well with the quark and sugar.
Whip the cream with the cream stiffener until stiff and fold it into the nut cream. Season to taste with the kirsch, rum or brandy, maybe decorate with a few nuts and refrigerate until you enjoy it.
Serve with fine pastries and coffee or hot chocolate.
