Prepare the dough the day before: knead all dough ingredients together, wrap in aluminum foil and leave in the refrigerator until baked.
Line the trays with baking paper, preheat the oven to 200 degrees top / bottom heat. Roll out the dough 3 mm thick, cut out cookies with different shapes. Bake each tray for 8-10 minutes. Makes approx. 4 trays.

Brush the cookies with egg yolk before baking or
Make a nut macaroon dough, put a dollop of it on the cookies, press half a walnut or a hazelnut on top.

Brush with icing made of powdered sugar and lemon juice and sprinkle with desiccated coconut or sugar pearls.
