Cut the goat cheese roll into 4 slices and place on 2 ovenproof plates. Roughly chop the rosemary and sprinkle over it. Drizzle with the honey.
Bake in a preheated oven at 250 ° on the second rack from above for approx. 4 to 5 minutes (convection not recommended). Roughly chop nuts or trail mix. After 2 minutes, sprinkle over the cheese slices and bake with them.
Mix the chilli flakes, oil and balsamic vinegar. Serve the cheese slices sprinkled with a little coarse sea salt in the sauce.
