Instructions

  1. Peel only part of the cucumber. Use the peeler to cut strips over the entire length. Keep turning the cucumber until only the core is left.
  2. Lay the cucumber strips overlapping on cling film.
  3. Mix the goat cream cheese with the olive oil and the finely chopped chives. Season to taste with salt and pepper. If the cheese is too moist, drain it first.
  4. Place the cheese mass at a distance from the edge over the entire width like a sausage. With the help of the cling film, wrap the cucumber strips over it so that a roll is created. Put in the refrigerator for a while.
  5. Divide this roll into two portions for a starter or cut into thick slices for finger food.
  6. Chop the pistachios and garnish the roll with them and with chive stalks.
