Peel the cucumber, cut in half lengthways and remove the seeds with a teaspoon. Then cut the cucumber into strips approx. 1 cm wide. Peel and dice the onion and sauté in a little oil until translucent, add the minced meat and fry with it. Season the meat well with salt, pepper, paprika and cayenne pepper. When the minced meat is nicely seared, add a little tomato paste and stir well. Pour the flour over the minced meat and stir. Now the cucumber pieces are added and are braised with. At this point I always take the inside of the cucumber that I took out earlier and press it through a very fine sieve so that I get the juice. That gives a finer cucumber aroma. Then pour in the vegetable stock and let everything simmer for about 10 minutes. Finally, add a dash of cream and season to taste again. Can be refined with a little fresh dill.
