Mix all ingredients (except sugar) together (flour, butter and quark) until you have a uniform dough.
Sprinkle a little flour on the kitchen table, take about 1/3 of the dough and roll out 3-4 mm thick. Use a round cookie cutter (7-8 cm diameter) or a glass (or similar) to cut out the circles.
Put the sugar in a flat plate. Take dough circles individually, place one side in the sugar and press lightly. Then fold the dough circle with the sugar side inwards (you get a semicircle).
Press one side of each semicircle into the sugar, fold again to form a quarter circle or little ear (sugar inside).
Press one side into the sugar again.
Spread the ears with the sugar side on a baking sheet lined with baking paper. Gradually make the remaining pieces of dough.
Bake at 180 ° C until the ears turn golden brown (approx. 20 minutes).
