Fry the minced meat in a little oil in a large pan. If you like, you can add an onion or 3 spring onions. Add the yellow beets, sauté them, then deglaze with the vegetable stock and coconut milk. Simmer a little while stirring in the curry paste. Then add the pasta and peas and let simmer gently for another 5 minutes.
If you like, season with soy sauce or salt and pepper.
