Instructions

  1. Sauté shallots or onions and garlic in the butter until translucent.
  2. Top up with white wine and reduce to half.
  3. Add the cream and reduce it by half.
  4. Sieve the onions and garlic.
  5. Season to taste with nutmeg, cayenne pepper, Worcestershire sauce and sea salt.
  6. Foam the sauce with the blender and fold in the chives.
