Dice the bacon and leave the fat in a pan or saucepan until the bacon is crispy brown. The rind can also be left out. Then remove the bacon and set aside. Discard the rind.
Peel the potatoes and chop them roughly into bite-sized pieces. Fry the cubes in the bacon fat with a little additional oil such as fried potatoes until crispy and brown.
Peel the onion, cut in half and cut into strips and fry brown with the potatoes. Salt and pepper. Finally add the bacon again.
Beat the eggs and beat them with a little salt, pepper and a few splashes of Tabasco until frothy and pour over the cooked potato, onion and bacon mixture. Switch off the stove and repeatedly remove the crushed egg from the bottom with a spatula, turn it over and stir until the egg is sufficiently shrunk, similar to scrambled eggs.
A real, hearty farmer`s breakfast is ready, just like you would in the former north German farming state of Dithmarschen.
