- 500 g potato (s), mostly waxy
- 1 onion (s)
- 150 g pork belly, smoked, mixed
- 4 egg (s)
- some oil
- Salt and pepper, more colorful, freshly ground
- some Tabasco

- Dice the bacon and leave the fat in a pan or saucepan until the bacon is crispy brown. The rind can also be left out. Then remove the bacon and set aside. Discard the rind.
- Peel the potatoes and chop them roughly into bite-sized pieces. Fry the cubes in the bacon fat with a little additional oil such as fried potatoes until crispy and brown.
- Peel the onion, cut in half and cut into strips and fry brown with the potatoes. Salt and pepper. Finally add the bacon again.
- Beat the eggs and beat them with a little salt, pepper and a few splashes of Tabasco until frothy and pour over the cooked potato, onion and bacon mixture. Switch off the stove and repeatedly remove the crushed egg from the bottom with a spatula, turn it over and stir until the egg is sufficiently shrunk, similar to scrambled eggs.
- A real, hearty farmer`s breakfast is ready, just like you would in the former north German farming state of Dithmarschen.
