Instructions

  1. Warm the milk in a small saucepan and melt the butter in it. Sift the flour into a mixing bowl and mix carefully with the yeast. Add the remaining ingredients and the warm milk-fat mixture and mix everything with a hand mixer briefly on the lowest setting, then work on the highest setting in about 5 minutes to form a smooth dough. Cover and let the dough rise in a warm place until it has visibly enlarged.
  2. In the meantime, heat the frying fat in a saucepan or deep fryer to around 180 ° C so that bubbles form around a wooden spoon handle held in the fat.
  3. Dust the dough lightly with flour, take it out of the bowl and knead again briefly on the work surface. Divide the dough into 16 equal pieces. Roll each piece of dough into balls. Make sure that the dough has no cracks. Let the dough balls rise again between 2 cloths dusted with flour until they have visibly enlarged.
  4. Put the dough pieces upside down in the simmering frying fat, bake until golden brown on both sides, remove with a slotted spoon and drain well on kitchen paper. Turn the Berliners in sugar while they are still hot and let them cool on a kitchen rack.
  5. Filling: Strain the jam through a sieve and fill it into a piping bag with a perforated nozzle. Use it to squirt some filling into the side of each Berliner through the light edge.
