- Grind the mint in a mortar, add sugar and salt, mix everything well.
- Layer the tomatoes in a glass, repeatedly adding a little of the spice mixture in between.
- Fill everything up with oil. The tomatoes must be covered with a layer of oil.
- The oil can be sieved afterwards and used for salads.
- Tastes good with wine, cheese, salami, pasta, risotto
