Beat the butter, sugar and lemon until frothy and gradually add the eggs and stir until smooth. Stir in the quark, flour and a little water. Fold in the raisins.
Bake about 2 tablespoons of batter in a pan with fat or oil to make golden brown platters.
Red fruit jelly, cherry compote or fruit salad go very well with this.
If you like, you can leave out the raisins, we tend to stick to the recipe less and add a few more.
